Buttermilk pancakes with berries
Makes 8-10 pancakes
Ingredients
- 1 1/2 cups self raising flour
- 1 tablespoon caster sugar
- 410ml buttermilk
- 1 egg, lightly beaten
- 1 teaspoon vanilla essence
- Olive oil or Canola spray
Topping
- 1 punnet of blueberries, raspberries or strawberries (or a mixture of all)
- 2 tablespoons of reduced or low fat vanilla yoghurt
Method
- Sift flour and add sugar
- Whisk together buttermilk, egg and vanilla
- Make a well in the centre of the mixture and stir in egg mixture. Do not overbeat as this will result in chewy pancakes
- Spray a fry pan with oil and heat
- Pour 1/4 to 1/3 cup of the mixture into the pan and cook until bubbles appear on the surface. Turn over and cook on the other side until golden brown
- Serve topped with berries and yoghurt
Note: buttermilk is low in fat and gives pancakes a nice texture, however it can be substituted with reduced fat milk.
