Buttermilk Pancakes With Berries

Buttermilk pancakes with berries

Makes 8-10 pancakes

Ingredients

  • 1 1/2 cups self raising flour
  • 1 tablespoon caster sugar
  • 410ml buttermilk
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla essence
  • Olive oil or Canola spray

Topping

  • 1 punnet of blueberries, raspberries or strawberries (or a mixture of all)
  • 2 tablespoons of reduced or low fat vanilla yoghurt

Method

  1. Sift flour and add sugar
  2. Whisk together buttermilk, egg and vanilla
  3. Make a well in the centre of the mixture and stir in egg mixture. Do not overbeat as this will result in chewy pancakes
  4. Spray a fry pan with oil and heat
  5. Pour 1/4 to 1/3 cup of the mixture into the pan and cook until bubbles appear on the surface. Turn over and cook on the other side until golden brown
  6. Serve topped with berries and yoghurt

Note: buttermilk is low in fat and gives pancakes a nice texture, however it can be substituted with reduced fat milk.
