Bean & Sausage Bake
Serves 4
Ingredients
- 2 slices lean bacon trimmed of fat and rind, finely chopped
- 1 onion, finely chopped
- 2 sticks celery, finely chopped
- 2 shallots, finely chopped
- 1 tablespoon parsley, finely chopped
- 225g can of baked beans in tomato sauce
- 2 thin sausages (choose lower fat varieties), sliced
- 1 tablespoon tomato paste
- ½ cup water
Method
- Preheat oven to 180°
- Mix onion, bacon, celery, shallots, parsley and sausage in a bowl
- Stir in baked beans, tomato paste and water
- Spread mixture in an ovenproof dish
- Cover and bake for 20 minutes
- Uncover and bake for a further 15 minutes.
Serve with wholemeal toast fingers
