Bean & Sausage Bake

Serves 4

Ingredients

  • 2 slices lean bacon trimmed of fat and rind, finely chopped
  • 1 onion, finely chopped
  • 2 sticks celery, finely chopped
  • 2 shallots, finely chopped
  • 1 tablespoon parsley, finely chopped
  • 225g can of baked beans in tomato sauce
  • 2 thin sausages (choose lower fat varieties), sliced
  • 1 tablespoon tomato paste
  • ½ cup water

Method

  1. Preheat oven to 180°
  2. Mix onion, bacon, celery, shallots, parsley and sausage in a bowl
  3. Stir in baked beans, tomato paste and water
  4. Spread mixture in an ovenproof dish
  5. Cover and bake for 20 minutes
  6. Uncover and bake for a further 15 minutes.

Serve with wholemeal toast fingers
