Beef tortillas

Serves 4

Ingredients

  • 4-6 soft shell wholemeal tortillas
  • 2 tomatoes, chopped
  • 1 cucumber, chopped
  • Mixed lettuce leavesr
  • 1 cup reduced fat cheese, grated

  • 250g lean beef mince
  • 1 tin kidney beans, drained and rinsed
  • 1 onion, chopped
  • 4 tablespoons tomato paste
  • ½ jar tomato based pasta sauce
  • 1 carrot, grated
  • 1 celery stalk, finely chopped
  • Olive oil or Canola spray

Method

  1. To make the filling, spray non stick pan with oil and heat
  2. Cook onion until soft
  3. Add mince, carrot and celery and cook until mince is brown and vegetables are soft
  4. Add tomato paste, beans and sauce. Stir until well combined
  5. Simmer on a low heat for 10 minutes until sauce is slightly thicker
  6. Heat tortillas in the microwave until warm and place on plate
  7. Place filling, chopped tomatoes, cucumber, lettuce and cheese in separate bowls
  8. Place tortillas, filling, salad items and cheese in the centre of the table and allow everyone to make their own tortillas. Serve with sweet chilli sauce and/or natural low fat yoghurt
