Beef tortillas
Serves 4
Ingredients
- 4-6 soft shell wholemeal tortillas
- 2 tomatoes, chopped
- 1 cucumber, chopped
- Mixed lettuce leavesr
- 1 cup reduced fat cheese, grated
- 250g lean beef mince
- 1 tin kidney beans, drained and rinsed
- 1 onion, chopped
- 4 tablespoons tomato paste
- ½ jar tomato based pasta sauce
- 1 carrot, grated
- 1 celery stalk, finely chopped
- Olive oil or Canola spray
Method
- To make the filling, spray non stick pan with oil and heat
- Cook onion until soft
- Add mince, carrot and celery and cook until mince is brown and vegetables are soft
- Add tomato paste, beans and sauce. Stir until well combined
- Simmer on a low heat for 10 minutes until sauce is slightly thicker
- Heat tortillas in the microwave until warm and place on plate
- Place filling, chopped tomatoes, cucumber, lettuce and cheese in separate bowls
- Place tortillas, filling, salad items and cheese in the centre of the table and allow everyone to make their own tortillas. Serve with sweet chilli sauce and/or natural low fat yoghurt
