Crunchy cookies
Makes approximately 24 mini biscuits
Ingredients
- 90g butter
- 1/4 cup honey
- 2 tablespoon golden syrup
- 1 cup self raising flour
- 1 cup flake breakfast cereal (choose wholegrain varieties)
- 1/2 cup sultanas
- 1/2 cup dark chocolate bits
Note: Use wholemeal flour to increase the fibre content
Method
- Combine butter, honey and golden syrup in pan and stir over a low heat until the butter melts. Cool for 5 mins
- Stir in the remaining ingredients until well combined
- Drop a dessertspoon of mixture onto a greased oven tray. Leave about 5cm between each cookie
- Bake in a moderate oven for approximately 12 mins
- Stand for 5 mins before removing from the tray
