Guacamole with pita crisps
Serves 6 children
Ingredients
- 2 ripe avocados, mashed
- 1/2 lime or lemon, juiced
- 1/3 cup coriander leaves, chopped
- 1/2 ripe tomato, chopped
- 1 red chilli chopped (for the adult version only!)
- Pepper to taste
- 2 wholemeal pita breads – cut into small wedges
Method
- Mix together the avocado, juice, coriander (and chilli)
- Seal with cling wrap directly on the surface and refrigerate until ready to use
- Place pita wedges on a non stick tray under a grill. Grill on each side until golden brown
- Mix tomatoes into guacamole just before serving. Serve with pita crisps
