Guacomole With Pita Crisps

Guacamole with pita crisps

Serves 6 children

Ingredients

  • 2 ripe avocados, mashed
  • 1/2 lime or lemon, juiced
  • 1/3 cup coriander leaves, chopped
  • 1/2 ripe tomato, chopped
  • 1 red chilli chopped (for the adult version only!)
  • Pepper to taste
  • 2 wholemeal pita breads – cut into small wedges

Method

  1. Mix together the avocado, juice, coriander (and chilli)
  2. Seal with cling wrap directly on the surface and refrigerate until ready to use
  3. Place pita wedges on a non stick tray under a grill. Grill on each side until golden brown
  4. Mix tomatoes into guacamole just before serving. Serve with pita crisps
